In the Eurail train times, I see NT3731 for Paris to Portbou, but I can’t find NT3730 for Portbou, Spain to Paris. Does NT3730 exists and if so how do I find the schedule and reserve a seat?

Correct. Also check the date. This train does not always run daily.
