I'm not aware of a timetable change on 17th May. The major one happened on 15th December 2024 and there will be a minor one in mid-June.
Train times can be released later in case of engineering works. Mention the route/date and we might be able to help. ;)
Look for the company websites/apps: CP for Portugal, RENFE Spain, SNCF France, SBB Switzerland, etc.
DB Navigator (German railways) is pretty reliable but it depends on the companies updating the European database. Always worth double checking through the company directly.
I wouldn't blindly trust google maps but it kinda works.

Regarding the routes, I cannot seem to get any search results in the app if I set the departure date any later than the 17th of May. And since I’m travelling past that date, I don’t really know what to do in terms of planning and adding journeys to my pass. Just for context, I am travelling with a pass I received through the Discover EU programme. I don’t know if that changes anything when booking?
Alright I didn't think to look on the Rail Planner/DiscoverEU app. Sadly they're not 100% reliable/up-to-date so for planning I'd recommend using the DB Navigator app and the websites I mentioned above.
A lot of trains are already there for 17th May and beyond. However timetable changes due to engineering works are still possible, especially in Germany. For a first look it's fine!
DiscoverEU doesn't change anything with booking reservations unless you received a set of free reservations as part of a trial. It should be written somewhere in the docs you received.

I have however received some seat reservations from DiscoverEU, so I assume that I would have to hold back on booking those till I’m closer to my travel date, so that the times are more accurate?
For those free seat reservations you'll have to use interrail.eu I believe.
You could book reservations as soon as they're released but refunds/exchanges are not always available: better wait until your plans are a bit clearer. Eurostar and night trains should be booked well ahead.
