Seat reservations are separate and remain valid if you cancel your pass.
Eurail may not even know you booked reservations, if you booked them elsewhere (which is almost always cheaper):

If you bought your pass via Eurail, then please first buy a new pass, and only then cancel the old one. That makes it an exchange and the fee is lower.
