We are two people with global passes. Please can anyone advise if the following is realistic :
Arrive Bucharest Nord May 14h Depart Istanbul May 19th if we make a reservation at Bucharest immediately will this be enough time to make sure we will get a reservation ?
If we the leave Istanbul on May 27th for Sofia booking as soon as we arrive in Istanbul(May 19th ) is this enough time to secure reservations in Istanbul.

In May, there's no direct carriage from Bucharest to Istanbul yet, which means you need to change trains a few times. You can board the night train in Dimitrovgrad:

The reservation for the train from Dimitrovgrad to Istanbul cannot be booked in Romania, unfortunately. You can book it in Bulgaria, but often not anymore on the day of departure, and then you need to go to the sleeper/couchette attendant directly. If you're lucky, you might succeed in Germany (you need very experienced staff), or you use one of the suggested travel agents suggested by Seat61 on the page above.
From Istanbul to Sofia, booking 8 days in advance should be fine.
