I have the 15 flexi global pass and trying to decide if it is better to book my reservations now for the different places that I will traveling to, like brussels to Paris or wait till its closer. Trying to get an idea on flexibility.

I would like to know if I create a reservation for say June 2nd but want to go somewhere on a different day, can I delete my June 2nd or does it automatically count as a travel day?

You can always alter plans and change routes or days you travel on, do not activate travel days until you are sure you are going to use them, once a day begins it can not be deactivated.

Reservations are entirely separate from the pass, you can book when you like and can always not travel if you choose to but the ability to cancel or alter reservations is down to the specific rules of the carrier and booking platform, some do allow cancellation and refund others do not.

Paris - Brussels is one of the poorer routes for reservations, they are expensive and there is a quota that often sells out for passholders on the fast direct trains.
