how do I delete one of my travellers details that automatically comes up on my traveller details? I cant delete it or add another traveller? Any tips?

You mean when you book reservations on the Eurail website? You can add/remove travellers with the button "Edit my trip”.
However, for most trains there are better places to book reservations: more reliable and cheaper. Check this page:
