I have a 2nd class Eurail pass … can I opt to upgrade to 1st class tickets on selected trips? Not for the whole pass, just one maybe two individual journeys??

Depends on the route/company: sometimes yes, mostly no.
However these upgrades (outside French TGVs) tend to be very expensive -> it might be cheaper to switch to a 1st class pass.

In the UK, it’s often possible for a reasonable price. And on French TGVs (domestic only, I think) as written above.
