I’m using my purchased Eurail pass to travel from Paris to Basel SBB. The route starts at Paris Nord and transfers at Paris Est via public transportation. Can I just start at Paris EST to avoid the public transportation transfer?

Where did you find this route? Sure, you can start your journey with a TGV at Paris Est and change in Strasbourg. Otherwise, you have direct TGV from Paris Gare de Lyon to Basel SBB, but the reservation fees are higher. BTW, it is better to walk from Paris Nord to Paris Est.

Yes, it just depends what you input into the planner. The trains to Strasbourg depart from Gare de l’Est, so if you put your start point elsewhere in Paris, it will tell you to transfer.

It's only 10 minute's walk from Gare du Nord, and your rail pass isn't valid on the Metro anyway.
