I know I have to activate the Flex Pass in the app by scheduling its 1-month validity period by 31st of August 2025, but I don’t know when I will travel or where, so I have no idea which day I will start my trip. Will I lose my pass if I don’t do it? Can I pick a random date and change it when I will plan my trip? Any help would be really appreciated.

You'll have to do the activation procedure on 31 August, or else you'll lose the pass. The latest possible start date will then also be 31 August.
After 31 August, you can still request a refund or an exchange, assuming you bought your pass 11 months before 31/8.
