July 2027 we travel to Enkhuizen – Stavoren for a bike trip around Friesland. We plan to travel from Manchester to London. From there via Eurostar to Amsterdam and then from Amsterdam to Enkhuizen. Just wondering whether this feasible.

Sure, that's easy. Use ns.nl or the NS app for train timetables in the Netherlands.
+9Will you be taking your own bikes with you? Eurostar have some pretty specific rules on taking bikes, but the rest should be OK - you might need to avoid peak hours.
Other than that, it’s a pretty easy journey.
