As far as I know, Avant trains cannot be booked online, nor on interrail.eu nor on Rail Europe. Perhaps try at a DB ticket counter if you were to cross Germany (they are able to sell passholder reservations, using the train number).
Alternatively book them at the first Spanish train station. Seats are plenty and both these trains are unlikely to sell out.
The 9:37 AVE is available on Rail Europe but you must use the English version at the moment (weird bug).

Yes that's possible. Though Spanish staff might want to see the journey activated on your pass (while it is not necessary!).
In addition they'll ask for names, date of birth and passport/ID number like any other RENFE ticket.
