The train timetables on Interrail.eu do not match the SNCF timetables. We have made reservations on the Interrail site for 5 SNCF journeys. In all 5 cases the time given on the reservation ticket is one hour later than the time on the actual SNCF timetable even though the train number is the same. If we turn up at the correct time (i.e. one hour earlier than it says on the ticket) will our reservation be valid? Has anyone else had this problem

Could be an issue with time zones? Interrail doesn’t handle them well in some cases.
You should take the train with the matching number yes. Maybe double check with DB Navigator app/bahn.com (German railways) as the French website is sometimes buggy too.
