Yes, don’t activate the pass until you’re sure you will travel, and don’t activate a travel day until you’re at the station, certain to depart. Otherwise you risk plans changing and using up a day unnecessarily.
I don’t know if there are any special conditions attached to the Freundschaftspass. I would guess not.
You can make TGV reservations before activating the pass. There is a good summary of costs and how to to it on the Seat61 website. Expect to pay €10 or €20 within France, and €18 for cross-border TGV or ICE. You can’t use Thalys through BE, I guess.
