Ive bought a 10 day Global pass to do an arctic circle trip to Sweden, norway and back through Finland. I was told I could only have one journey in my own country so Ive used my first day to travel from Manchester to London Euston, only to find this service is not covered, have I wasted a day on my pass

Manchester to London is covered of course.

On 2 of your pass days you may travel in your country of residence (so-called in/out days). On such days you may take as many trains as needed.

You could do Manchester Piccadilly - Euston followed by St. Pancras - Brussels/Amsterdam (mandatory seat reservation on Eurostar).

What makes you think Manchester-London isn’t covered? It certainly is.
