I’m planning to take the Eurostar to London Paddington and the travel further north from London Kings Cross on the same day. I assume I’ll have to book seats for both journeys. What happens if the Eurostar is delayed and I miss the booked connection? Can I just get the next train north?

Then you just take the next train. Reservations in GB are optional anyway, except for the few night trains.
