I will travel by train in Finland to either Helsinki or Turku. I will take a ferry to Stockholm and then on the next day continue by train to Copenhagen. Same on the way back. It’s unclear how outbound/inbound trains work. If I buy a 7-day pass, will two of those days count for the domestic journeys in Finland or not? So do I have only 5 days outside Finland to use?

The outbound/inbound just mean that on 2 of your 7 days you can also use trains in your country of residence. (In addition to trains outside you country of residence.)

So, yes the travel in finland also counts as 2 days of the 7 days in you case.
