I am considering getting the 7 day travel pass and then just paying for one of my trains normally. Will it be cheaper to do this for my Paris to Brussels train or Ljubliana to Zagreb?

Meanwhile Paris-Brussels starts at 29€ but it's usually around 60-80€ if not more.
If you wish to take the direct Eurostar there's a 27€ reservation fee with Interrail -> popular and passholder quota (book ASAP). There are cheaper/reservation-free options too if you prefer. :)
Same thing for the London-Paris Eurostar: book ASAP, especially with the Olympics...
