Hey! Im interailing for 2 months and the first month I’m ending in Spain. Can I travel with plane back to Oslo for a weekend to attend a wedding and then travel back to the same city in Spain and continue my interrail?

Of course. You’re only limited to maximum two travel days with the pass in your own country, not in the rest. You can take as many trains as you want everywhere else, as long as you have a valid pass.
