You’re probably just too early, September is still very far of in railway terms. Try to book closer to your travel date, about 2-3 months in advance is usually the timeframe in Italy, but this varies. Check regularly from mid-June on.
Also, it helps to mention exact travel dates, departure/destinations stations, and where you’re trying to book seat reservations to help you better.
We don't have a crystal ball, so please mention route, date and departure time.
Most Italian trains are best booked on www.raileurope.com. That's also cheaper than via Interrail.
