What happens if I don't make a reservation on a "reservations optional" train.  Will I be able to stay on the train if I can't find a seat?

As long as it is not completly overfilled (very rare, only happened to me on regional trains that do not offer reservations), you will just have to stand until you find a seat.

In very rare situations, the train might be overcrowded and unable to continue for safety reasons, especially on high-speed lines with tunnels. In this case, some passengers without reservations must disembark. On the Bernina line in Switzerland, which suffers from overtourism, access to the platforms can sometimes be restricted without a reservation.
