Hi. I am traveling on my own from England to Germany and back over Christmas. I than want to repeat the same journey for New Year with 2 children agred 7 and 10. Can I do that with a one country pass?

A one country pass is only valid in one country, with a few extensions for the Germany pass, such as the ICE to/from Brussels. It won't be valid on the Eurostar or anywhere in the UK.

With a global pass you have 2 travel days in the UK, so you need one pass for each travel, Christmas and New Year.

Have you checked single fares? This might be cheaper if you can get a good deal, as Eurostar reservations for Interrail are quite pricy and have limited availability.
