Is it not possible to choose your own seats when booking for italian trains at öbb? I only get an option, that they will make the reservations.

No, they don’t have seat selection.
www.raileurope.com also provide passholder reservations on Italian trains and do offer seat selection in some cases.
Only the desktop site has the option to add a rail pass.
