We need help with the seatplace reservation for trains in Spain. Is it possible to buy seatplace reservation at the trainstations in Spain? Because the seatplaces over the Interail App are booked out. Does anyone have experience with that?? Please respond, if you know something, it would be really helpful to us!

There are at least 3 websites where you can book seat reservations for Spain, see:

The Interrail website (not the app) is only one of them. The Interrail website can't book all Spanish trains. In addition, it does not say a train is fully booked, but rather that there's no result, which has multiple possible causes.
You can indeed buy pass reservations at a Renfe ticket office, but during busy periods it can be better to book in advance. If that doesn't work for you, then please mention route, date and departure time.
