No holidays in Bayern or Austria, random blue monday and you travel when most people are working or at school. I wouldn’t bother, probably quite some free seats available.
Reservations don’t cost much for Austrian trains when bought via www.oebb.at/en (select seat reservations only), 3 EUR in 2nd class, free in 1st.
