My wife and I are traveling from Nice to Zurich in late April, but when I booked the tickets, I only received two tickets, one from Ventimiglia to Pavia, and one from Pavia to Zurich. How do I book a ticket in advance from Nice - Ville to Ventimiglia?

The train from Nice to ventimiglia is just a regional train. All you need to get on is the activate the journey on your eurail pass before.
So its sounds like you have all the mandatory reservations for the journey already.
Are you travelling with an Interrail or eurail Pass or normal tickets?
This is a regional train train without reservations. If you are travelling with an interrail pass, you just need to add the journey to your pass and activate it.
