Trains London - Paris, it's September but I can't seem to book for 29 December? But there are trains going because I saw on the Eurostar site. Why can’t I book through the Eurail site? Thanks for your advice!

Try Rail Europe (website, not app. Add your pass in the search box). It’s cheaper than the Interrail reservations service anyway. I see availability for the 29th.
