I will leave Copenhagen early in the morning, change a train in Oslo at about 4 pm, and arrive Trondheim after midnight (0:56 am). Does this trip count as one day or two days for Eurail Pass?

One day. The departure day is what counts and on a travel day you may board as many trains as you'd like! :)
You could also decide to have dinner in Oslo and board the night train leaving at 10:50pm. Still one travel day.
(Note that you'll have to change first in Göteborg/Gothenburg before Oslo. This doesn't change anything.)
