For anyone that has travelled as a 17 year old with their 18 year old friends, what sort of documents have you had to take, and have you got any tips on how to make moving between borders smoother?

Most borders in the EU/Schengen zone do not know any regular controls. Occasional checks might happen, but are rare.

Only the UK-EU border gets a thorough check, I’lld just make sure you have an authorisation document from (one of your) parents.

And check the rules for the accommodation where you will stay. Some places don't allow guests under 18 without a guardian.

Offically you need a authorisation form signed by both parents :/ I had back then the travel confirmation form with details of the parents (how to contact them) + ofcourse signed by them + a copy of the ID from the parents. In 95% of the controls the Police was fine with the ID of the minor but i had few strict checks where the Border Police called the parents for confirmation. In my experience Switzerland and Hungary are ery strict about that.
