You can do part of these journeys by night train: Paris-Nice, Paris-Latour de Carol, Paris-Cerbere.
Madrid - Seville is now as little as 2.5 hours by high speed train, so no need for night trains!

si, hace tiempo había más trenes nocturnos, que también son una gran experiencia para viajar y ahorrar tiempo de traslados !
