Ciao, stò creando un triplanner e non mi dà nessuna scelta per il treno da bucarest a istambul ( dovrebbe esserci un notturno) e neanche da istambul a ankara.

These don’t appear in the Trip Planner, but the trains are still running. You can see timetables on cfcalatori.ro for the train from Bucharest, and https://ebilet.tcddtasimacilik.gov.tr for the Turkish trains.

When you have the train times from those sites, you can add the train manually to Trip Planner.
You can’t buy Interrail reservations online for either of these trains, only at the ticket office.
