I am booking a trip from a town in England via London St. Pancras to Nuremberg. I put my departure time as 5 in the morning and it gives me the two legs of the journey with times, but I want more time to cross London and to go through passports etc. I cannot see how I can say I want to leave St. Pancras on a later train.

As above, split your journey (in the app) into two (or more) legs.

Home→London

London→Brussels

Brussels→wherever→Nuremberg.

Having said all that, you need to check that there are reservations available on the Eurostar from London first before you book anything else.  These are limited in number.  I’ve never really had a problem when booking in advance other than maybe having to book a slightly later train because the ideal one is sold out.

The key thing here is that the leg from London is the one with a hard constraint so you need to get that one nailed down first.

What is "it”?

If you want more time to change, then just plan your journey in more parts. There's no obligation to plan each journey in one go.
