It's best not to use the Interrail website to plan. The same is valid for the Rail Planner app. They're not reliable enough for that purpose. National planners or websites are more reliable, and for international journeys, bahn.de or the DB Navigator app is a good choice.
The Interrail website can also book reservations, although it's more expensive. For reservations, use this page as a guide:
