I see the Germany pass does not include night trains. Does this mean any train that travels though the night or just sleeper trains with beds? Would a normal ICE train leaving Munich at 1am for Berlin count as a night train?

Overnight DB services in seated trains within Germany will be fine.
It’s just the sleeper trains - run by ÖBB, European Sleeper etc, which aren’t included.
