From the UK? Whereabouts are you starting, and what time can you leave?
Even if you’re going from London, it’s hard to look past the direct Eurostar destinations if you’re only going only for a weekend. Lille, Paris, Brussels, Rotterdam or Amsterdam.
You could try to get further, either with a night train from Paris / Brussels, or with a quick night in a hotel and a train on the Saturday morning, but that starts to take up a lot of time
