I purchased a pass a while back - whenever I go to book travel, I am stopped from selecting open seats. There is no option to do so? How on earth do I reserve seats in advance? This is absolutely maddening

The Interrail website isn’t necessarily the best place to make reservations. Seat61 has an excellent guide to how and where to reserve: https://www.seat61.com/interrail-and-eurail-reservations.htm
If you can't make it work using Seat61's information, then the minimum information needed is route, date and departure time.
