just wanted to make sure I’m reading this right
the Eurail pass is good from UK, Ireland and over to Amsterdam and so on
any suggestions on the best route to make the most of our trip???

+15Yes a Eurail Globall Pass cover these Routes :) Note that some reservations applies for the Eurostar trains from London through the tunnel - Brussels to Amsterdam :/
There are so many routes possible :)
You may consider to take special Rail & Sail offers for example Dublin - Ferry - Train - London or London - Harwich - Ferry - Hoek van Holland - Amsterdam (Harwich - Hoek van Holland can be done as overnight cruise)
