How can I book a eurail pass for 1 adult and 3 kids under 11 without having to buy a youth pass? Or would it be cheaper to buy individual tickets for 3rd child where necessary?

Th 3rd child will need either a youth pass or separate tickets. What's cheaper (youth pass + reservations or separate tickets) entirely depends on your journeys.
