I am traveling to Germany next April. Most of my routes do not offer a 1st class seat option. Can I book 2nd class and upgrade on a per route basis?

I'm surprised most routes don't have a 1st class option: are you travelling mostly on regional trains? You can only upgrade on a select few routes (TGV's in France, domestic journeys in Belgium, probably a few others), and the upgrade price is sometimes not very attractive.

Interrailing seems difficult at first sight, but it's pretty amazing.
