Hello! My train pass (7 days within 1 month) was purchase 16 June, 2022. I am hoping to travel next summer (May or June 2023). I know I have to activate my pass by 11 months after receiving it (so 16 May, 2023). Does this mean all of my travel dates must be before 16 May, 2023? Or can I activate it on 15 May and travel through the end of May and into June?

The highlighted option is correct, as long as it is activated before the deadline it retains it’s full validity.
If you bought the pass on 16 June, then the latest possible start date is 16 May 2023 (you should notice you can't select a later date). The latest possible date to go through the activation process is also 16 May 2023 (after that date it's too late). The pass will then be valid until 15 June 2023.
