I have just purchased 2 x 15 day Eurail passes. I have added them to my phone, but not activated them. When I checked my first journey, there was not tick box or slide to add the journey to the pass. Will this become available Once I have activated the pass? And secondly, I not due to travel for a month, can I activate my pass to test, then deactivate it?

Yes there will be the tick box after activation. For testing you may activate the pass in advance for a date far in the future. However remember to deactivate it too.
Don't forget to book seat reservations whenever required. It's a different process and it's best to avoid eurail.com to get them (extra fees). Have a look at https://www.seat61.com/interrail-and-eurail-reservations.htm
