A Railpass like Eurail or Interrail never can be sold out :)
How ever sometrains need a reservation and these reservations can be sold out :/ Because of that if you have a fixed shedule i recommend to reserve certain trains like Eurostar,TGV France - Spain, TGV France - Italy as soon you can.
You can buy a pass 11 months before your travel. The global pass cannot be sold out but reservations that are mandatory for some trains can be sold out, especially during high season. Popular departures trains like the Eurostar sell out months in advance during the holuday period.
