I am planning a trip to Europe and I am thinking about getting the Eurail Italy pass since I’m planning to explore Venice, Florence and Milan. I am wondering if you can use the Eurail Italy pass in subway stations in Milan?

No.

City metros/subways/trams/buses are not part of the pass network.

For transport in the cities a ticket from the local transport network will be best, for example in Milan a day ticket for all modes is €7.60 https://www.atm.it/en/ViaggiaConNoi/Pages/default.aspx

If those 3 cities are the extent of your travel you should price regular tickets from https://www.trenitalia.com/en.html as they may be cheaper than a Eurail pass.

Mabuhay. Firenze has mostly bus and a few trams (that do not go to where a tourist wants to) and VNz has mostly for the tourist the vaporetto=boats, which are very low priced for locals and not at all low for the tourist.
