If you activate the Flash Global Pass. Can you still change the date like normaly? Or is that not possible, because it's not exchangeable? (I am speaking about the mobile pass)

the normal usage rules apply. So you can activate (which also means to choose your first travel day) and then deactivate again before the first travel day.
+11not exchangeable means that you can’t give it back to Interrail and get money back. But I’m not 100% sure.
