I start my travels on September 6. I have already selected Day 1 and Day 2 of my travels and paid for my reservations, but now want to add a new day 2 and change my previous day 2 to Day 3. How do I do this without losing all the plans and reservations? Thank you for your advice.

You can change your plans as you wish on Rail Planner app as long as you've added the correct train on the correct date before boarding. :)
It is best not to activate your pass in advance for such events : you wake up ill, sudden change of plans, strikes,... If a travel day has started you cannot deactivate it.
