Hello! Do you know if I need to create my whole journey before I start my trip? Or if I can change it and add new trips as I go (be a bit more spontaneous)?

This is the nice thing with Interrailing. That you can be flexible and spontaneous and just catch a train in a direction that you feel like. As long as you avoid the trains that require reservations and that might be sold out during high season.
