Or is a Interrail-ticket (Global) not valid on the trains between Bilbao and Hendaye? And if I have to buy a seperate ticket, how much does this cost (I can't really find the fares).

AFAIK interrail is not valid. But ticket should be very cheap
Fare depends on how you pay-cheapest is with the local chipcard-not worth it for just this trip.
Also do note that A BUS +Bilb-Donostia is much quicker-and a little more expensive-think of 8-10€
You would even have to buy seperate tix for last leg Donostia (San Seb.)-Hendaya/e: around 3€ (just a rough estimate)
