I would like to purchase a 10 day in 2 months Eurail Global Flexipass for travel between May 30 and July 10. Total duration of travel is 42 days but my travel occurs in three months (May, June, and July). Will a 10 day in 2 month pass cover 10 days of travel in the period?

That's no problem. You pass validity can start any day you choose. If your start date is 30 May, then it will be valid until 29 July.
