No doubt this has been asked before, but we would like to purchase a five travel day global Eurail Pass for mid July 2025. While our plans are pretty sure, if something were to change (health issues, etc) is it possible to cancel prior to the start of the trip? If so, is it full refund?

Either you go for the plus add-on (or whatever it is called now) to get a fully refundable pass if you want to buy your pass through eurail.
Or you can also buy a fully refundable pass via https://allaboard.eu/eurail without paying anything extra.
Note that passes can’t be refunded anymore once the validity period has started. It is therefore wise to activate your passes just on the day of departure.
