If I buy the “10 days within 2 months” Eurail Global Pass, am I able to use all 10 days in one month? Or, does it split me 5 days in month one and 5 days in month two?

You can use the 10 travel days whenever you like during the 2 months of the validity of the pass.
If you start the validity of the pass on say the 4th of August, then the pass will be valid until the 3rd of October.
