If I’m traveling from Greece to Edinburg, Scotland, can I take Eurorail Global Pass on any of this journey?

Most of it yes but there are no trains the full way.
Either you take a bus from Thessaloniki to Sofia (pass not valid/no discount) or a ferry from Patras to Bari/Brindisi (some discount). The journey will take at least 3 full travel days.
I know you have 3 months in total but honestly I might fly to spend more time there/on the way in.
